The Pasta Date:
A Little Saucy

Two forks. One kitchen. Absolutely no reason to behave.

A little creamy. A little dreamy. Entirely worth staying in for.
Twirl tender pasta through a silky roasted-garlic Parmesan cream sauce. Roll fresh ribbons together or keep it easy with packaged pasta, including gluten-free. Add golden chicken, juicy shrimp, or savory mushrooms—or let the pasta shine. It’s a cozy, hands-on dinner for two, with plenty of reasons to linger.

First, pick your pasta adventure

Packaged pasta: less prep, more time together. About 50–60 minutes including roasting garlic.

Add a little something?

Keep it creamy and simple.

Your shopping list: 1 head garlic; olive oil; 6–8 oz dried pasta; butter; heavy cream; Parmesan; black pepper; optional lemon zest and parsley.

Aprons on. Music up.

Choose a playlist, clear a counter, and set the table. One of you handles the music; the other gathers ingredients. Switch jobs next time.

♡ Little detour: Each pick one song that reminds you of the other. No explanations until dinner.

Roast the garlic

Gather
  • 1 whole head garlic
  • 1 tsp olive oil
  • Foil or a covered oven-safe dish
Do this
  1. Heat oven to 400°F.
  2. Slice the top from the garlic head; drizzle with oil and wrap in foil.
  3. Roast 35–45 minutes until cloves are soft and golden. Cool briefly and squeeze out the cloves.
Make-ahead: roast earlier, refrigerate promptly, and reheat when needed. Never leave homemade garlic-in-oil at room temperature.
♡ While you wait: Name one place you'd love to visit together—even if it's just a restaurant across town.

Make a little mess

Packaged pasta

Use 6–8 oz dried pasta (roughly half a 1-pound box). Bring a pot of salted water to a boil. Cook according to the package until just tender. Before draining, save ½ cup cooking water.

Traditional homemade pasta

Use 1⅔ cups all-purpose flour, spooned and leveled, plus 2 large eggs. Mix with a fork, knead 8–10 minutes until smooth, cover and rest 30 minutes. Roll thin with a rolling pin, loosely fold, and cut into ribbons. Boil in salted water for roughly 2–4 minutes, checking early. Save ½ cup cooking water. If crumbly, add water a teaspoon at a time; if sticky, dust lightly with flour.

Gluten-free packaged pasta

Use 6–8 oz certified gluten-free pasta and follow its package instructions closely. Save ½ cup cooking water before draining. Use clean utensils and surfaces to prevent wheat cross-contact.

Homemade gluten-free pasta is in development; we'll add a tested, brand-specific flour formula and volume measurements after a kitchen trial.

The main event

Let's get saucy

For two
  • 1 tbsp unsalted butter
  • ¾ cup heavy cream
  • ½ cup finely grated Parmesan
  • Mashed roasted garlic (start with half the head)
  • ¼–½ cup reserved pasta water, as needed
  • Black pepper, to taste
  • Optional: ½ tsp lemon zest, 2 tbsp parsley
Cook together
  1. Melt butter in a skillet over low to medium-low heat. Stir in garlic for 30 seconds.
  2. Add cream; warm gently 2–3 minutes. Don't boil hard.
  3. Lower heat or remove from heat. Stir in Parmesan gradually.
  4. Toss in pasta. Add pasta water a tablespoon at a time until silky.
  5. Finish with pepper, optional lemon zest and parsley. Taste before salting.
Add-in timing: Choose an option above for specific instructions.
Optional extras: choose chicken, shrimp, or mushrooms above; follow the cooking instructions below and fold into the finished sauce. Parmesan made with animal rennet isn't vegetarian; choose a vegetarian hard cheese if needed.
♡ Little detour: One person tosses; the other plates. Vote on the prettiest plate. The winner chooses who washes dishes and who loads the dishwasher. No dishwasher? Winner assigns washing versus drying.
As long as you like
The happy ending

Two forks. Phones away.

Set the plates down, turn up your favorite song, and enjoy what you made together. No perfect pasta required.
